Salmon shirred eggs / oeufs cocotte au saumon

This baked eggs with salmon recipe is perfect for a brunch or a nice ‘entrée’. As a starter, it would also be great with a glass of good white wine. In French, we call them ‘oeufs cocotte’ which would be translated as ‘chick eggs’ (special thank to Clotilde from Chocolate & Zucchini for her great translation) ;-) . Once you’ve tried these ones, don’t hesitate to try new combinations. What about replacing salmon and chives by mushrooms and parsley?!

Preparation time: 5 minutes – Baking time: 6 to 8 minutes

Ingredients (for 4 servings)

4 eggs
7 oz (200 g) of smoked salmon chopped scraps
6 tablespoons of creme fraiche
2 tablespoons of small chives
4 slices of bread
Butter
Pepper

Instructions

1/ Preheat oven to 500° F (260° C/Th 9).

2/ Grease 4 ramekins with butter or margarine and chop small chives.

3/ Dispose salmon chopped scraps in the ramekins. Pour small chives on top keeping some aside for decoration. Add half a tablespoon of cream into each ramekin.

4/ Break one egg into each ramekin and top with creme fraiche and some pepper.

5/ Fill half of an ovenproof dish with boiling (or very hot water) and put ramekins on it. Bake in oven for 6 to 8 minutes depending on how you like your eggs cooked.

6/ Top with some more small chives and serve with toasted bread.

Soft cooked egg and bacon salad

Soft cooked egg and bacon salad

I love making brunch on week-ends. You get out of bed too late to have breakfast and still be hungry at noon. Or you get up at noon, it’s too late to call it breakfast but you’re still not ready to have lunch ;-) . This soft cooked egg and bacon salad is a perfect brunch recipe but, of course you can have it with any other meal! I usually skip mustard in the seasoning sauce when I make it in the morning, it’s less aggressive when you just woke up!

Preparation time: 10 mn  Cooking time: 10 mn

Ingredients (for 4 servings)

4 eggs
4 slices of bread
3 1/2 oz (100 g) of bacon
3 1/2 oz (100 g) of corn salad (you can also use arugula if you prefer)
6 tablespoons of olive oil
1 tablespoon of Dijon mustard (Click here to buy online)
1/2 lemon
Salt and pepper

Instructions

1/ Preheat oven to 410° F (210° C / Th 7).

2/ Get water to a boil in a saucepan.

3/ Brush bread slices with olive oil (3 tablespoons) and bake in oven for 5 minutes on each side.

4/ When water is boiling, add eggs carefully. (I usually put the egg in a tablespoon, it’s much easier to get it gently to the bottom of the saucepan). Leave them in boiling water for 4 minutes. When they’re done rinse them with cold water and leave aside.

5/ Heat a frying pan over medium heat and add bacon slices. Cook for 3 minutes on each side, or until bacon looks crispy.

6/ When bacon is done, leave it in a plate covered with a napkin to drain its fat.

7/ Dice bread and cut bacon into pieces.

8/ Squeeze lemon in a bowl and whisk mustard, 3 tablespoons of olive oil, salt and pepper with it.

9/ In 4 plates, arrange corn salad, bacon and bread pieces. Serve on top lemon sauce.

10/ Carefully remove egg shells and place a soft cooked egg on top of each plate. Break it for the egg yolk to flow.

11/ Serve right away.

Green asparagus and vinaigrette

Green asparagus and vinaigrette

Asparagus season has come :-) I love that time of the year when in season fruits and vegetables’ list starts growing. Here is a simple recipe to enjoy green asparagus with little cooking to make. You can serve them as a starter but it will also make a perfect side dish for fish. We had them with salmon, it came out great.

Preparation time: 20 mn

Ingredients (for 3 to 4 servings)

2.2 lbs (1 kg) of fresh green asparagus
6 or 7 basil leaves
1 non-treated lemon
1 teaspoon of capers
6 tablespoons of olive oil
4 tablespoons of balsamiq vinegar
Salt & pepper

Instructions

1/ Take water to a boil in a large pan.

2/ Clean asparagus. Peel the last third on the opposite side of the head and cut the hard end off.

3/ When water is boiling, add asparagus and leave for 8 to 10 minutes.

4/ Clean lemon and grate zest.

5/ Rinse and chop basil.

6/ Prepare vinaigrette in a bowl by mixing oil, vinegar, salt and pepper. Stir energetically.

7/ When asparagus are tender, take them off water and lay them next to each other in a plate.

8/ Top asparagus with capers, chopped basil, lemon zest and a pinch of salt.

9/ Serve right away.

Prosciutto & blue cheese appetizer spoons

I’ll finish this ‘appetizer spoons week’ by one recipe I discovered not long ago but I already know I’ll be making it quite often. Unlike the other recipes I posted along the week, you’ll need some cooking for that one ;-) . I caramelized shallots but you can also use onions as long as you slice them into thin pieces. They help sweeten blue cheese’s strong taste. The three flavors go just perfect together… I used raspberry vinegar when caramelizing shallots, it adds a delicious fruity taste; but you can replace it by red wine if you like.

Preparation time: 35 mn

Ingredients (for 10 spoons)

3 prosciutto slices
6 shallots (or 2 onions)
2 oz (55 g) of blue cheese
2 tablespoons of raspberry vinegar (or red wine)  (Click here to buy online)
1 1/2 tablespoons of butter
1 tablespoon of granulated sugar
Salt & pepper

Instructions

1/ Peel and chop shallots.

2/ Melt butter in a frying pan over low heat. (Be careful it doesn’t get brown, it’s very bad for health.)

3/ When butter has melt, add chopped shallots. Leave covered, stirring frequently, for about 10 mn or until translucent.

4/ Add sugar and stir. Let shallots caramelize for a couple of minutes, then add raspberry vinegar. At that time, you should probably go for medium heat. It’s important when adding alcohol to get it to a (smooth ;-) ) boil so the strong taste evaporates. When the strong smell is gone, you’re done. Take pan off heat.

5/ Cut prosciutto into small pieces.

6/ Dice blue cheese.

7/ Fill the bottom of your Chinese soup spoons with caramelized shallots. Add a dice of blue cheese and top with prosciutto pieces.

8/ Serve right away.

Chickpea and lime marinated mushrooms soup

Here is an original and very tasty winter soup recipe. I’m sure you’ll love the slight cumin flavor and the lime marinated mushrooms… I use dried chickpeas because they taste better (in my humble opinion) and are more nutritional than canned ones but they definitely ask for more organization ;-) You’ll need to soak them overnight before cooking your soup. So if you don’t have time, go for canned chickpeas and reduce considerably cooking time.

Preparation time : 30 mn (+1 night soaking of dried chickpeas) – Cooking time : 2 h

Ingredients (for 4 servings)

2/3 lbs (310 g) of chickpeas
1 large onion
1 bay leaf
10 to 12 cups (2, 5 to 3 l) of water
1 cup (25cl) of sour cream (crème fraiche)
1 pinch of cumin powder

Marinated mushrooms

1/2 lbs (310 g) of portobello mushrooms
3/8 of cup (10 cl) of olive oil
1 lime
1 tablespoon of fresh chopped cilantro
1/2 pinch of red chilli powder

Toasted bread

4 bread slices
1 garlic clove
1 tablespoon of olive oil
Salt and pepper

Instructions

1/ Rinse chickpeas until water comes out clear, then soak them in about 12 cups of water overnight. (Add cooking salt and a tablespoon of baking soda to it: it helps soften the cheakpeas).

2/ Peel and slice mushrooms. (When cleaning mushrooms you should try to avoid using water, they would get soaked and loose taste). Combine olive oil, cilantro and chilli pepper.

3/ Clean lime, grate zest and squeeze it. Add zest and juice to marinade. Add salt and pepper. Pour mushrooms in marinade and set aside.

4/ Get water to a boil. Peel and slice onion. Pour onion slices, bay leaf and chickpeas into boiling water. Cover (leaving some air coming out so it doesn’t boil over) and leave until chickpeas are tender.

5/ Mix it in a food mixer; add creme fraiche and season with cumin, salt and pepper. (Try it and add seasoning if needed).

6/ Peel garlic clove. Heat olive oil in a frying pan, add the whole garlic clove. Get the garlic all around the pan so the oil gets garlic flavour. Add bread slices cut in half. Leave 1 or 2 minutes on each side.

7/ Serve chickpea soup adding marinated mushrooms on top with bread on side.
