Mashed cauliflower recipe

Mashed vegetables are easy to make and great when trying to get your kids used to a veggie they wouldn’t eat if they saw it… Well, cauliflower is definitely one of them. I won’t tell names but I even know adults who say they don’t like it and loved my mashed version ;)
Most of the time, problem with broccoli and cauliflower is not the taste but rather their specific texture causing people to dislike them. Trying a mashed version is a good way to figure out the origin of the aversion for a vegetable. So let’s play a trick on cauliflower’s haters and start cauliflower rehab with this mashed cauliflower and spices recipe!

Mashed cauliflower with spices recipe

Preparation time: 5 minutes – Cooking time : 15 minutes

Ingredients (for 4 servings)

1 cauliflower
4 big potatoes
1/4 cup of milk
1 tablespoon of butter
1/2 teaspoon of ground cilantro seeds
1/2 teaspoon of four spices mix (2 mesures of cinnamon, 1 of ground clove, 1 of ground ginger, 1 of grated nutmeg)
1/4 teaspoon of curry
Salt and pepper


1/ Wash and peel potatoes. Cut them into thick slices so they get done faster.

2/ Wash and dry cauliflower with a clean cloth. Cut leaves and stem and discard them. Cut florets and hard core.

3/ Put potatoes and cauliflower in a large saucepan. Cover with water and add salt. Get to a gentle boil and leave for 15 minutes or until potatoes and cauliflower are tender.Boiling water for vegetables should always be very salty.

4/ Drain potatoes and cauliflower, put them back on the saucepan and add milk. Puree with an immersion blender.

5/ Add spices, salt, pepper and butter. Stir well and taste, then adjust seasoning if needed.

Serve mashed cauliflower as a side dish with fish, meat or falafel.
